Uncooked squash is VERY tough and hard to peel.
We grow dozens of butternut squash each year and we just bake the entire squash, fully intact with the seeds and stringy guts still inside until it gets tender. Then let it cool and it is extremely easy to peel. This cooked squash can then be mashed, put into freezer bags (we put it up in one meal increments) and frozen.
